Our really easy vegan menu is completely family-friendly and for those who need to curb their spending. None of this is set in stone and can be changed up depending on what your family likes to eat.

Easy ideas for vegan meals

This easy vegan meal plan can feed four people (2 adults and 2 children) with leftovers!

It does assume that you have a few of the cupboard kitchen staples in, like herbs, flour, few spices and pasta.

Everything is cooked from scratch and some can be prepared in advance or leftovers be frozen for the following week. Snacks of apples and bananas have been included for the kids too!

This vegan grocery shopping list and meal plan was done at Asda and with fresh vegetables, but to lower the cost a bit more, you could even swap to frozen vegetables and try a local discounter like Aldi or Lidi.

These easy vegan recipes are perfect for the whole family. You can make them in advance or freeze them if you decide to batch cook.

These simple vegan meals can be swapped in and out. Most can be done using some of the staples you already have or can be pre-prepared.

All these vegan meals are quick to make. A win when you have a busy family to please!

Vegan Breakfast Ideas

1. Peanut butter cup pancakes

These can be frozen too by making them as drop scones then wrapping them in grease-proof paper and storing them in an airtight container. Then just grill them to defrost. Perfect if the kids need a quick breakfast.

If your kids don’t like peanut butter then try these vegan pancakes. They are fluffy and cheap to make too.

2. Overnight oats

These can be made the night before. Poor them into soya milk or oat milk the night before with a touch of cinnamon. We use tall glasses. You can add dairy-free yogurt too if the kids like it creamy. Then add the fruit to the top in the morning before you serve.

3. Rainbow smoothie bowl

Grab all your leftover fruit and any frozen you have and whizz it up in a blender. We use this bullet one as it takes up no space. I strain it as well as my kids hate lumps. Add it to a bowl and put some diary-free yogurt on top.

4. Porridge

Add some light spices like cinnamon to the mix or even some banana on top for that extra sweetness.

5. Beans on toast

This classic is an easy breakfast treat on the weekend.

6. Oatmeal waffles

These are easy to make if you have a waffle machine. Make sure you pre-heat the machine as it needs to be piping hot. Once everything is nicely mixed, it is a little lumpy, add the mix for a few minutes. Watch them as they do burn quickly.

7. Tofu omelets

We don’t add any spices or anything to this as the kids find it too hot. Scrabble the tofu in a pan for a few minutes. Add the tomatoes and steam off for a few minutes.

8. Baked granola bars

We use these on days when the kids have to be at school early and want a snack. Make this before and store them in an airtight container. You can add dairy-free chocolate to them or fruit. Everything works!

9. Breakfast sandwich

Add whatever your kids like to this one. For us, it’s tofu, avocado, and tomato with some lettuce. We use muffin rolls or just normal sliced bread.

10. French toast

Leave the toast in the mixture for as long as you can. Makes for great toast!

11. Banana nut oatmeal

Make sure the bananas are overly ripe. Combine the oats, soya milk and honey, then banana in a microwave-safe bowl.

12.  Frittata

We use potato, onion, tofu egg mixture and whatever vegetables we have around. Make sure the pan is on a hot heat before you add the mixture.

13. Fry up

This is our Sunday special. Make them with beans, meat-free sausages and homemade hash browns that can be made with potato and peanut butter.

14. Breakfast muffins

These are another great frozen option. Make a batch and defrost them as you need too. We make ours with oats and grated apple.

A lot of these recipes you can even make the night before or freeze them for when you need them. We use frozen Quorn meat when we can’t get around it or sub the meat for more vegetable, normally sweet potato.

Breakfast: Bruscetta toast (bread,tomatoes,onion & herbs)

Lunch: Salad & falafel (flour, chickpeas, spices, spinach, tomato, onion, pepper)

Dinner: Spag Bol (meat free mince, leftover veg)


Breakfast: Porridge (optional banana)

Lunch: Falafel wrap (carrots, celery)

Dinner: Chilli & rice (mixed beans, lentils, chopped tomatoes, onions & peppers)

Vegan Grocery List on a Budget

If you’re new to vegan cooking as a family, then here are a few tips to help you get started on a budget:

Check the labels on everything! This includes stock cubes, sauces, spreads and breads. Red markers are words like whey, casein and lactose, which all come from milk. Don’t rely on the bolded words.

Watch out for wines and beers as some non-vegan varieties may have been processed with animal products or even contain dairy.

Most breads and pastries contain butter and some milk. Always ask or check the label if you’re unsure or make your own to cover your basis.

If the kids have a sweet tooth, then look for agar-agar or vege-gel which are both made from seaweed.
