This turkey fried rice with egg recipe is really simple and quick to cook, and is perfect for all your leftover Christmas turkey or as a quick dinner with any meat leftovers you have. You can even serve it with chicken or beef if that’s what you have as leftovers.

How to make turkey stir fry
Turkey isn’t just for Christmas. It’s a slice of great meat that is high in protein and low in fat. You can get it pretty cheap too either minced or as a breast or leg.
Making turkey stir fry is simple. If you have your meat pre-cooked then put it to one side and cook the vegetables and rice first.
We use frozen vegetables as they’re cheap and means I don’t have to chop, and chuck everything in together and just add the rice right at the end.
It takes about ten minutes to cook and can be left to its own devices

Turkey Stir Fry with Brown Rice
This was inspired by our leftover turkey recipes which are all made from Christmas dinner leftovers. The rest of the items are from our cupboard. These are the stable food items that we keep in stock.
Handful Turkey £1.87
2 Egg 14p
250g Rice 31p
60g Frozen Peas 5p
2 tsp Soy Sauce 4p
100g frozen onion 15P
100g frozen peppers 13p
Total: £2.69 = 67p a head for 4 people

Turkey Stir Fry with Brown Rice recipe
Get the rice cooking first. We prefer wholemeal but you could use white rice or noodles. We use 75g per adult. So for four of us, it’s 250g, but however much you like will work.
Use three times as much water as rice, as it sucks it up while cooking. Let it boil and add the rice. If you are using noodles then wait and add them at the end.
Bring the rice to the boil then leave it on low for about 15 minutes or in till the rice is soft.
While the rice is cooking, add a tiny bit of oil and stir fry the frozen onion, peppers, and peas for about 1 minute.
Add the turkey and heat through, checking it’s piping hot.
Add the eggs, and with a fork, keep whisking around, in till it starts to cook like an omelette, but in tiny pieces.
Once everything is cooked, add the rice, and stir through, making sure the egg pieces and turkey are scattered throughout the dish. If you are using noodles then add them now.
Add the soy sauce, stir then serve when hot.
This is a really easy dish that can be done is you’re in a rush. It uses a lot of staple ingredients too and can be used with any meat.

You can add as many different vegetables as you like. You can add carrot, sprint onions or any red cabbage. Add any vegetables you have laying around or that you know the kids will eat.
Why not try white rice instead of brown or noodles? Try adding a touch of dried ginger or some chilli flakes if you don’t mind it hot.
