The best vegan tacos recipe
We love tacos, they are a fun way to get the kids trying new food. These are meat free and can be paired with creamy avocado salsa and lime juice.
This roasted veggie tacos recipe is great for the whole family. You can either make your very own tortillas as we have below or buy a box of pre-made tacos.
If you prefer the pre-made corn tortillas or tacos then they should only need a minute or two in a warm oven.
We love serving our tacos with corn on the cob or roasted sweet potato. You could even bulk them out a bit and make black bean tacos. If you like these creamy then add a vegan sour cream on top.
If you prefer to add some vegan taco meat then go ahead. It can really add to this veggie taco recipe.
175g baby corn 95p
190g frozen red onions 42p
100g red pepper 45p
5g cumin seeds 5p
2 tsp olive oil 5p
110g kiwi fruit 60p
115g tomatoes 50p
5g garlic clove 5p

1 tsp vegan bouillon powder 2p
5g smoked paprika 5p

100g wholemeal flour (optional) 20p
Total: £3.09 that’s 77p a person for 4 people.
Start by heating the oven at 200 degrees fan. Put the baby corn, red onion, and pepper into a roasting tin and add the cumin and oil over the top.
Add the kiwi and tomatoes on the side of the roasting tin, as these will need to be taken out before the other roasted vegetables. Put all this into the oven for 20 minutes.
If you are making your own tortillas, mix 60ml of water into the flour and make a dough. Knead until the dough is smooth and cut it into four. Roll out each piece onto a floured surface. Once ready, shape into a 16cm round tortilla. Once ready, cover with a tea towel as this will stop them from drying out.
After 20 minutes, take the tomato and kiwi out of the tin and put the rest of the vegetables back into the oven for a further 10 minutes. You could also add pickled onions or a tin of black beans at this point.
While the vegetables are cooking, skin the kiwi and get as much of the inside of it out as you can into the bowl. It may still be hot though so be careful. Add the cooked tomatoes, garlic, some coriander, the bouillon, and paprika. Use a hand whisk or blender to make the salsa smooth.
You can also swap the kiwi fruit for jackfruit tacos instead if you prefer.
Heat a wok or a large pan and cook the tortillas one at a time for a minute or two on each side. You won’t need any oil at all as the temperature of the pan will be hot. They will only need about a minute or two until you see them puff up.

If you have brought pre-made tacos or tortillas then add them to a pan and roast lightly for a minute or two. Just so they get warm.
Once ready, add the salsa and cabbage to the tortilla then add the roasted vegetables. Then serve.

Plant based Mexican Rice With Chipotle – We love making Mexican rice ourselves. We make it with brown rice, vegetable stock, frozen mixed vegetables and frozen onion.
Coleslaw – Making your own vegan coleslaw is a must! It takes so much nicer and it means you can add what you like.
