Homemade breadcrumbs
Please don’t be put off thinking that these are hard to make. You can buy your breadcrumbs if you prefer. We do make ours homemade by saving up the ends of bread loaves and whizzing them up in a food processor.
You can all bread types like fruit bread and bagels. Don’t let it go green. Just cut them up into smaller chunks then whizz them up using the food processor. Add a pinch of salt and that’s it. Your own homemade breadcrumbs that are cheaper than buying them in a shop.
If you don’t have a food processor then we use this Kenwood Mini Chopper here*. It’s small, dishwasher safe and is great for chopping pretty much anything.

You can add any spices to your Southern Fried Chicken coating. It really does depend on how spicy the family like food and what kind of taste you are going for. We use a teaspoon on the spices below for our own Southern Fried Chicken coating.
All of these are dried and mixed together then used in the recipe below.

1 tsp white pepper
1 tsp dried thyme
1 tsp dried basil

What goes with Southern Fried Chicken?
There’s loads of side dishes that go with Southern Fried Chicken. Our favorites are:
Chips
Wedges
Salad
Coleslaw
Corn on the cob
If you can, try and make your chips or wedges from scratch. They are a lot cheaper than buying frozen and you can add a bit of extra spice to them cook them however you like.
We like deep frying our chips but if you are on Slimming World then baking the chips works well too.
To make homemade chips we:
Peel and chop four potatoes into chip size pieces. You can also use sweet potato if you prefer.
Add them to a large pan and boil for 10 to 12 minutes.
Drain the chips and “rough them up”. This gives the chips some texture and crunch.
At this stage, we use a deep fat fryer like this one here. Using a deep fat fryer to cook homemade chips means that you get a lovely soft inside and crunchy outside. A bit like chip shop chips.
Add a hand full to the deep fat fryer and fry for about 10 minutes. Tip them out onto kitchen roll then fry the rest.
Re-add the cooked chips for a second time. This makes them extra soft inside. Fry them for only a few minutes this time then serve.
If you prefer to bake the chips in the oven then add them at 200 degrees for 30 minutes.
Southern Fried Chicken Shopping List
You can use frozen chicken breasts if you prefer. Remember to defrost them the night before in a fridge. Like above, we use homemade breadcrumbs but shop brought ones are fine too.
This is a Southern Fried Chicken breast recipe but you could use chicken wings as well. Remember to check that they are cooked through fully before you serve.
This crispy chicken recipe is based on four people sharing.
Frying the chicken does work too but we prefer it baked.
4 chicken breasts £1.40
150g breadcrumbs 65p
2 eggs 20p
4 tbsp plain flour 15p
4 tbsp milk 10p
2 tbsp low cal spray 10p
4 potatoes 40p
4 corn of cob 52p
Total: £3.52 (Correct at time of publishing.)
Southern Fried Chicken Instructions
Preheat the oven to 180 degrees.
Chop the chicken into strips and put into a bowl. You can cut the chicken pieces into blocks if you prefer. Please remember that they may cook quicker then the strips or chicken wings if you are using them.
If you are using the Spicentice packet then sprinkle a little over the chicken. This is the time to add your own spice mix if you prefer. Mix the chicken and leave to marinate for 10 to 15 minutes.
Add the plain flour into the bowl and marinate.
In a different bowl, beat the eggs and milk together. On a plate, add the breadcrumbs with the rest of the spices if using and mix together.
Take some chicken, put it in the flour, dip it in the egg then into the breadcrumbs. Put them on a baking sheet on an oven tray. Spray with low-calorie oil.
Cook the chicken for 20 to 25 minutes or in till it is nicely brown on top.
