How to make Katsu curry paste?
If you’d prefer to make the Katsu curry sauce yourself then the spices you’ll need are:
Coriander
Cumin
Salt
Chilli flakes
Fenugreek
Garlic flakes
Dried ginger
Paprika
Turmeric
Cinnamon
Black Pepper
Cloves
Bay
Cardamom
Star Anise
Chop up or grate an onion. Add the above spices, dried is fine, and mix them in a blender. The paste will seem rough. This is your spice base for the Katsu curry sauce.
How to make homemade breadcrumbs?
Making your own homemade breadcrumbs is a lot cheaper than buying them from your local supermarket. Use the end of your bread loaf or even the last bagel that you might end up throwing away. We’ve even used leftover fruit bread for our breadcrumbs.
Cut them up small then blitz them in a blender. You can make a huge box and store them in an airtight container for next time too.
Chicken Katsu Curry
This chicken Katsu curry comes in at under £1 a head for four people. It can seem a little spicy so if your family need it toned down then add a little Greek yogurt to the side of the dish.
We use frozen onion for this recipe as it saves us chopping it up. We also use frozen chicken breasts as they are cheaper and we can buy in bulk and use as and when we need them.
