This is an easy dinner recipe that comes in at under £1 a head

Baked chilli chicken is a yummy dish that combines the rich flavours of tender chicken with a spicy kick. This recipe is not only simple to prepare but also offers a healthier alternative to traditional fried chicken. The key to achieving the perfect baked chilli chicken lies in marinating the chicken pieces in a blend of spices, garlic, and fresh chillies, allowing the flavours to penetrate deeply.

It doesn’t have to be spicy! It can made sweet or more soy. We think of this as more of a stir fry dish as you can put everything in together and fry it off in the wok.

What is the texture like? 

Because the chicken is cooked in the oven, the chicken is tender and soft. The noddles and vegetables add a nice bit of colour to your plate and a slight crunch, depending on how you cook them. We prefer the wok as it means you can fry them all quickly. 

Is this recipe sweet or sour? 

This is more of a sweet chilli chicken recipe but it can be spiced up with flakes or made more soy with soy sauce. 

How easy is this to cook? 

This is a really easy recipe as we make it with chicken breasts and frozen vegetables. You can make it with chicken thighs if you prefer, but I would cook the chicken first then pull the meat off the bone beofre adding it to the wok.

How long does this take to cook?

This baked chicken recipe takes 25 minutes to cook but that’s mainly due to the chicken cooking in the oven. By baking it, you get a lovely golden coated cover on the chicken before you add it with the noodles. 

Baked chilli chicken ingredients 

25g flour 10p

1 garlic clove 5p

1 tsp chilli flakes 5p

2 chicken breasts £1.20

5 tbsp oil 5p

stir fry vegetables 50p

spring onions 85p,

10g rice wine vinegar 7p, 

1 tsp ground ginger 5p, 

2 tsp tomato puree 5p, 

1 tbsp honey 7p. 

Total: £2.99 that’s 74p a person for four people.

Best Ingredients in Homemade Sweet Chilli Sauce

Our favourite ingredients are: 

– Honey: Instead of using sugar, you can use honey to sweeten up your sauce. It gives your sauce a more smooth texture as well. 

– Maple syrup: This makes the sauce really sweet.

– Rice vinegar: This mkaes the sauce sharp and more soy based.

– Flour or cornfour: This helps to thicken a sauce. 

– Garlic:  Garlic is great as it adds flavour to your sauce. We grate our garlic as the kids do not like the lumps. 

– Chilli flakes: A great way to make a sauce slightly spicy. 

How to Make Baked Chilli Chicken

To start, defrost your chicken breasts. We use frozen as it means that we can use as much or as little as we like. Chop it into finger sized pieces and coat with corn flour. 

Heat a large wok and fry the chicken so it’s golden on the outside. Please try not to overcook it as it’s going to go into the oven for 15 minutes as well. Baking at 200°C (400°F) ensures that the outside becomes crispy while keeping the inside juicy. It typically takes around 30-40 minutes for the chicken to cook through completely; checking with a meat thermometer will confirm it has reached an internal temperature of 75°C (165°F) but because it has been fried it should be ok. Please check before eating. it should be completely white inside.

Next, make the sauce. Add the rice wine vinegar, ground ginger, tomato puree and honey. Mix together then heat gently over the stove. Take off heat when it starts to boil.

Add your vegetables to the same wok but don’t add the noddles until the end as they only take a few minutes to cook. 

When the vegetables have soften, add the noodles and the chicken back to the pan. Then add the sauce. Make sure it covers everything. then serve.
