Chicken fajitas are a great family meal idea if your kids like to help themselves. The great thing about fajitas is that you can make this different everything depending on what your family like or how spicy they like meals.

This fajita recipe is really simple to cook and can be made vegetarian or vegan if you prefer.

This is a simple family meal that everyone can help themselves too. It takes very little time to cook which we think is a plus. As you can see, it’s really cheap per person too so having this on rotation on the meal plan can really help save you money off your food bill.

We tend to have it on a Friday night or when we have friends over as it’s so easy to bulk out and add other side dishes with it to make it fun.

This means we are less likely to grab the takeaway menu.

If you are a beginner then don’t worry, this really is easy to make. You don’t need any of the fancy fajita making kits or anything like that.

3. Write down everything you need as you use it. You can then add meals to your shopping list just before you go. Writing your shopping list as you use things means that you are less likely to forget anything.

4. Batch cook. If you think you may go for that takeaway menu one night this week then why not cook extra of what you are cooking and put it in the freezer. That way you have a homemade yummy meal that can be re-heated for the whole family really quickly.

5. Use your freezer. Your freezer is your friend. If you are struggling with money one week then go through your freezer and cupboards and see what meals you can rustle up. We try and use one thing from the freezer and our cupboard a week to keep the price down.

There are so many side dishes that you can make with fajitas.

Our favorites are:

– Shredded lettuce

– Sweetcorn

– Grated cheese

– Soured cream

– Guacamole

– Tomato salsa

– Mixed rice

– Tortilla chips

-Cucumber

– Carrot sticks

– Cherry tomatoes

– Potato wedges

Easy chicken fajita recipe

This chicken fajita recipe serves four people. It takes about ten minutes to prep all the vegetables or quicker if you use the frozen versions. Fresh red pepper works well too. You could add red onion if you prefer.

In this recipe, we have used our own homemade fajita seasoning which is:

1 tbsp chilli powder

2 tbsp smoked paprika

1 tbsp ground cumin

1 tbsp garlic powder

½ tbsp ground coriander

1 heaped tbsp dried oregano

Add all these spices together and really crunch them down in till they combine.

You don’t have to use it all. If you think it’s going to be too much then store it in an airtight container and leave in a dark place.

Spoon in one tsp at a time if you’ve never used this recipe before and keep trying it.

Spicentice* also do a great fajita mix if you like spice. This one is also gluten-free!

Homemade Tortillas

We make our own tortillas too as we find they are nicer and cheaper than buying them from the shop.

400g self-raising flour

1/2 tsp salt

300ml warm water

3 tbsp extra virgin olive oil

Stir together all the ingredients in till you have a combined dough.

On a floured surface, kneed the dough for a few minutes in till it feels less sticky.

Separate the dough into around eight balls. They do shrink a bit.

Roll out the tortillas in till flat and round.

Add them to a hot frying pan with a small bit of oil if needed. They just need a few minutes each side in till they are slightly brown on each side.

3 chicken breasts £2

1 onion 8p

2 garlic cloves 50p

150g frozen mixed peppers 75p

50ml lime juice 7p

1 tsp salt 2p

10g fajita seasoning 35p

Total: £3.77 = 94p

Chicken fajita method

Cut the chicken into strips.

Slice the onion into strips and add the lime juice.

Make the seasoning to the above if using and leave it while you prep the rest of the ingredients.

Heat the wok or pan. Add the garlic and fry it for a second.

Add the chicken and fry in till it’s slightly brown.

Add your onions and peppers.

Related Posts: 

Cook it all in till the chicken, peppers and onions are tender. Taste before servicing to make sure it’s not too spicy or to add more seasoning.

If the mix is dry then add a teaspoon of water every so often to stop the mix from sticking.

Leave it to shimmer for a few minutes while you are heating up the wraps.

This is an easy chicken fajita recipe that costs under £1 a head for the whole family. This can all be cooked with frozen vegetables and can be swapped and changed depending on taste.

Total Time 25 minutes

Ingredients

  • 3 chicken breasts
  • 1 onion
  • 2 garlic cloves
  • 150g frozen mixed peppers
  • 50ml lime juice
  • 1 tsp salt
  • 10g fajita seasoning
